Most nights my go to dinner is either rice or potatoes... but school has been kicking my butt this week and I thought that this weekend I deserved something special. Cue pizza.
spelt pizza base:
(serves 1 thick crust or 2 thin)
§ 2 cups organic spelt flour
§ 3/4 cup warm water
§ 2 tsp baking powder
§ 1 tsp sea salt
§ 2 tbsp olive oil
pumpkin puree sauce:
§ 1 cup japanese pumpkin
toppings:
§ 2 medium potatoes – boiled and chopped
§ 1 cup spinach
§ 1 cup onion - chopped
instructions:
§ preheat oven to
200°C
§ cut up 250g of pumpkin
§ place in oven and
cook until flesh is tender when pierced with a knife (approx. 60 minutes)
§ once cool enough to handle scoop out pumpkin
flesh into a blender
§ blend until smooth with no chunks
§ place the flour,
sea salt and baking powder into a bowl
§ make a well in the centre and add the olive
oil
§ combine and
gradually pour in the water whilst mixing (you may need to add a bit more
water)
§ once the dough has formed into a ball transfer
to a lightly floured surface and knead until dough is soft and smooth
(5-10minutes)
§ top base with
pumpkin puree
§ sprinkle potatoes,
onions and spinach on pizza
§ cook in pizza
stone/oven for 20-30 minutes or until crisp
