There are two options for the tart filling depending on which form of acai you have the easiest access to and both are super simple (and delicious).
Serves 2 x 10cm tart cases
ingredients:
almond chocolate crust:
§ 2/3 cup ground almonds (can use any nut)
§ 5 medjool dates
§ 1/4 cup cacao powder
§ 1 teaspoon vanilla
Acai filling (option 1):
§ 1 cup cashews
§ ¼ cup apple juice
§ ¼ cup Amazonia acai powder
§ 2 dates (optional)
Acai filling (option 2):
§ 3 x Amazonia acai ‘energiser’ frozen smoothie packs
directions:
if using option 1 soak cashews for 15-30 minutes
place all crust ingredients into a blender or food processor and blend until combined – the crust should be just starting to stick together. Scoop the crust mix into a cheesecake pan and press down to form the base.
using option 1 or 2 put all ingredients into a blender and blender until the mixture is smooth and creamy - you may have to scrape down the sides a few times
once filling is blended begin scooping it into the cheesecake pans and then place them in the freezer to set before removing
optional: top with rose petals, granola, cacao nibs, blueberries, nuts etc. – anything that takes your fancy!
